As a regular at Brooklyn's Smorgasburg, Bamboo Bites provides Thai delicacies and iced tea to locals almost every weekend. Their most famous dishes are mango, classic, and soy-bacon variations of coconut sticky rice, served in a unique bamboo encasing that can usually be seen on the streets of Thailand. The Bamboo concept came to the founder of this stand while he was backpacking through Asia. He made a lot of connections with people over food and wanted to share that with his fellow New Yorkers.

The inspiration for this truck came to its founder when she was working to get the kids of a homeless youth shelter to try healthier, affordable food. She thought if she made dishes with healthy ingredients that also brought children the yummy and familiar taste of fast food, it would be easier for them to convert to a more nutritious lifestyle. Now, she spends her days reinventing classic American foods like burgers, hot dogs, collard greens and corn bread to offer people to vitamins and nutrients their body needs.
